Mini Spicy Bean Burgers (GF)

These little spicy Mexican inspired burgers are easy to make and so tasty. Gluten-free and packed with protein and fibre, they are not only loaded with nutrition, but also flavour. Serve them with homemade salsa and a fresh salad for a delicious midweek dinner.

Ingredients

How to make Mini Spicy Bean Burgers (GF)

  • 2 cans red kidney beans, drained and rinsed
  • 1/2 -1 tsp chilli powder (depending on how spicy you like it)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Small bunch flat leaf parsley, chopped
  • 1 lemon - zest and juice
  • 1 medium, free range egg, beaten
  • Herbamare® Original seasoning salt
  • Black pepper
  • Coconut oil for frying

How to make Mini Spicy Bean Burgers (GF)

1. Place the beans in a large bowl and mash with a fork or potato masher.

2. Stir in the spices, parsley, lemon juice, zest and beaten egg. Season well.

3. Roll into about 6 or 8 small balls and flatten to make a burger shape.

4. Place in your freezer for about 30 minutes to chill before cooking.

5. Heat some coconut oil in a frying pan and gently fry until golden on either side.

6. Serve with homemade salsa.
