The only problem you might find with cutting out red meat is a reduction in your sources of iron. However, with IBS you are unlikely to be absorbing minerals well anyway, and there are more benefits to be gained by removing the red meat from your diet, as it is extremely heavy to digest and few people with IBS deal well with it.
Try introducing more fish, as this is an excellent protein source that is far lighter to manage. Ensuring that you have plenty of cooked green veg and iron sources such as beetroot, dried fruit (raisins, figs, dates, unsulphured apricots), all well chewed rather than bolted down, will make up any lack in the iron department. You could initially take a natural iron such as Spatone, which is unlikely to be problematic to absorb.
