It is actually fairly common to experience new allergies as we get older, though the reasons for this aren't exactly clear. It has been linked to the menopause, with symptoms both developing or worsening at this time. This is because histamine is often produced in high amounts during the menopause and, as this chemical is also released to fight off allergens, there can often be an overload of the two. This may or may not apply to you yet, but it is worth bearing in mind.
New allergies in adulthood have also been linked to pollution - it can weaken the immune system causing you to become more sensitive to allergens. Stress can also impair the body's ability to fight off allergens.
When it comes to what you can do, I would focus on managing symptoms and avoiding triggers, rather than worrying about why you have got more allergies. As you can see, new allergies in adulthood aren't always caused by factors we can control!
