Strawberry jam is one of my favourites, and this recipe is gluten-free and contains no artificial sugar or sweeteners; not only that but it is very quick and easy to make.
All you need to do is replace the honey with maple syrup.
1. Soak the chia seeds in the water for 10 minutes or until all the water has been absorbed. This is what adds thickness to the jam.
2. Blend the strawberries, honey and soaked chia seeds at high speed until the desired consistency. If it is too thick add more water, and if it is too thin increase the amount of soaked chia seeds.
