The delicious recipe works perfectly as a nutritious side dish and goes to show that healthy recipes certainly don’t need to be complicated. This sweet potato recipe is packed full of nutrients and counts towards 1 of your five a day.

Ingredients

  • 2 small or 1 large sweet potato
  • 2 tbsp extra virgin olive oil
  • ½ tsp turmeric powder
  • ½ tsp hot smoked paprika powder (or just smoked paprika, if you like milder flavours)
  • 1 garlic clove, crushed
  • Herbamare Spicy

How to make Spicy Sweet Potato Wedges

1. Slice the sweet potatoes into rough wedge shapes, keeping the skin in-tact.

2. Mix the wedges in a bowl with the olive oil, turmeric, paprika, garlic and a sprinkling of Herbamare Spicy and arrange on a baking tray.

3. Bake in a pre-heated oven, at 200°C for 40 minutes, giving them a shake at the half way point to avoid sticking.

Sweet potatoes contain lovely complex, slow-release carbohydrates, plus are packed full of nutrients, including the antioxidants beta-carotene and vitamin C. The fibre content of sweet potatoes is complex and you can increase this further my keeping the skins on!
