Orange & Vanilla Granola (Vegan + GF)

Breakfast cereals like granola can be expensive to buy and packed full of sugar, but it’s actually quick and easy to make yourself. The combination of orange and vanilla in this recipe gives it a deliciously decadent flavour. Healthy and energising, this is a great way to start your day!

Ingredients

Orange & Vanilla Granola (Vegan + GF)

  • 1 big juicy orange
  • 2-3 tblsp agave syrup
  • 1/2 vanilla pod
  • 200g jumbo oats or spelt flakes (you can use rice flakes for a gluten-free version)
  • 75g sunflower seeds
  • 75g pumpkin seeds
  • 50g flaked almonds
  • 1 dsp mixed spice
  • 1 tblsp rapeseed oil

Tips & Alternatives:

As an alternative to agave syrup you can also use maple syrup or honey.

Gluten Advice:

Pure oats are naturally gluten free. However, they are often contaminated with wheat. If you are sensitive to gluten it is best to check that the oats you are buying are certified as ‘pure’ or ‘gluten free’.

Alternatively, you can do as Jane suggests and use rice flakes.

How to make Orange & Vanilla Granola (Vegan + GF)

1. Preheat your oven to 160oC/300F/Gas 2. Line a large baking tray with greaseproof or baking paper.

2. Put the zest and juice of the orange into a small saucepan with the agave syrup.

3. Remove the seeds from the vanilla pod by slicing it lengthways and scraping out the tiny black seeds with the point of a sharp knife. Add to the orange juice and heat very gently until simmering and the agave syrup has melted. Don't let the mixture boil.

4. Mix the dry ingredients in a bowl. Make a well in the middle and pour the orange juice mixture and rapeseed oil into it and mix together thoroughly.

5. Loosely spread the mixture onto the baking tray (or over 2 trays) and place in the oven for 25-30 minutes. Check it every 5-10 minutes and shake gently to make sure the granola is colouring evenly.

6. Once it's ready, leave to cool and then store in an airtight container. This can be stored for up to a month (if not eaten before).
