The higher percentage the dark chocolate is, the purer it is – look for organic, dark chocolate with 70% or higher cocoa content. Also, the darker the chocolate the less sugar it will contain! For vegans and dairy-free, always make sure you check the ingredients, as some brands contain milk or butter oil. A good tip is to check the allergy information to see if it may contain milk.
1. Peel the pears, leaving the stalks intact. Cut the bottom off the pears so they sit flat on a plate for serving.
2. Place in a saucepan with the apple juice, lemon juice and enough water to cover. Add the cinnamon sticks, cloves and agave syrup.
3. Place on a medium heat and gently bring to the boil. Leave to infuse in the syrup for an hour or so until cooled.
4. Serve on a puddle of melted dark chocolate (optional).
