One of my childhood favourites, this recipe is one from my lovely mum and really quite adventurous for the 1980’s! So easy to make, this is a healthy soup the whole family can enjoy!

Carrot & Ginger Soup

  • 1 large onion, chopped
  • 6 medium carrots, chopped
  • 75g red lentils
  • Pinch of dried chilli flakes
  • 1 litre vegetable stock (You can use Herbamare® Bouillon)
  • 1 inch root ginger, peeled and grated (about 1 tsp)
  • Juice and zest of 1/2 orange

How to make Carrot & Ginger Soup

1. Heat the oil in a heavy based pan.

3. Add the carrots, lentils, chilli flakes and stock.

4. Simmer for 15 minutes, until the lentils are cooked.
